Nectarines in Lime Honey Recipe

It has turned into a week of sharing old family recipes on Lucy Loves. These tart and tasty Nectarines in Lime Honey have graced our table at home for many years. My Mother is unsure of the origin of this recipe, but thinks it may have been an old cutting from the Daily Telegraph, so apologies if I should be thanking someone I haven’t.

This is such a simple recipe, it’s more of an exercise in cutting and marinating rather than actual cooking. The delicious end product, however, belies the simplicity as the taste is wonderful. The nectarines also have a dual personality. They are a tasty dessert served with my Simple Ice Cream or double cream, or have them for breakfast with thick chilled yoghurt and granola.

So from simple beginnings comes a brilliant fruit based dish. It has a whiff of health too, which is always a bonus and lets face it, rare from me. You could always negate that health though by slathering on the cream or serving alongside a simple sponge or shortbread, so no need to panic.

Looking like a still life painting in the making, here are the ingredients for my Nectarines in Lime Honey. The nectarines were so ripe and juicy, they really are perfect at this time of the year. They are the sort of fruit you can’t eat in public due to juice dribbling down your chin issues.

Start with the infused honey. Take a small saucepan and measure in the honey and water. Then juice and zest the lime and add these citrus flavours to the pan.

Agh, hands, hands, hands.

Bring this lovely syrup to the boil over a low heat and simmer for a couple of minutes to allow all the flavours to blend.

In the meantime, cut the juicy nectarines into slim wedges and pop them in a decorative looking bowl, one which is bigger than mine. I had just bought mine from the charity shop and was determined to use it regardless of the fact it was clearly too small. Pour over the warmed lime honey, then put in the fridge to chill.

Once chilled, serve these wonderfully fragrant fruits, as you please. I chose the unhealthy route with ice cream and/or cream, of course I did.

From our family table to yours, this recipe is simplicity in a bowl. The sweet citrus flavours compliment the juicy nectarines and they can be pudding or breakfast. Easy, tasty and dual purpose, this may well be your new favourite dish.

Nectarines in Lime Honey Recipe

Serves four people

500g ripe nectarines, I used four good sized ones

4 tablespoons honey

4 tablespoons water

Juice and zest of a lime

Ice cream or cream or yoghurt and granola to serve

Take a small saucepan and measure in the four tablespoons of honey and water. Zest and juice the lime then add to the pan. Bring to a boil over a low heat then turn down and simmer for around 2 minutes.

Cut the nectarines into wedges and place in a decorative bowl. Pour on the warm honey mixture then refrigerate until cool. Serve the fragrant nectarines with ice cream or cream for pud or with yoghurt and granola for breakfast.
