Ibiza 43 Cocktail recipe
We’re off for a little mini break to Ibiza. Booked with some friends last year over a bottle of wine or two, this will be a much needed escape from the lack of spring warmth in London at the moment. To celebrate, I’ve finally utilised my bottle of Licor 43 to fashion this Ibiza 43 cocktail, to share the Balearic love from me to you.
I bought this aforementioned bottle of spirit a while ago to make a brilliant two ingredient espresso martini and share it with you, then promptly forgot to. Promise I’ll get around to sharing this soon. This wonderful Spanish liqueur is a complex blend of, as the bottle suggests, 43 ingredients; it’s got mediterranean citrus, vanilla and a hint of spice. Suffice to say, it’s bloody delicious and goes so well with plenty of fresh lime and pineapple juice in this Ibiza 43 cocktail.
This is totally sippable, Clyde and I very much enjoyed perfecting the recipe on a wet and cold Saturday in April. It’s a tough gig, this cocktail blogging business.
I don’t always advocate buying random bottles of spirit but this Licor 43 is a keeper. It’s got tons of uses and brings a warm fruity whiff of vanilla to everything it touches. I bloody love a pineapple based cocktail, it screams sunshine, so fingers crossed for the forecast in the Med.
No need for a cocktail shaker for this, just a nice interesting glass and some ice. And yes, Ben does get cross with me for stealing his lovely glass. Pour on your generous shot of Licor 43.
Go in with the fresh lime juice for zing and citrus to compliment the liqueur, then pour on the pineapple juice.
Finally, gently stir to combine, then drop in a wedge of lime or pineapple, the choice is yours.
Now it’s time to discover just how sippable this really is.
As much as I’d love to you take you with me, I can’t, so enjoy this Ibiza 43 cocktail on me. It’s a delicious substitute, I promise.
