Boozy Ice Cream Cups recipe
If I had to pick my favourite recipe from the last 9 years *bloody hell that’s a long time* of writing Lucy Loves, I’d have to say my Simple Ice Cream recipe would be right up there. It’s a bloody genius recipe, even if I do say so myself, and it’s the star of the show in my Boozy Ice Cream Cups.
This is the most perfect, super quick, super simple summer dessert. It starts, and pretty much ends, with a batch of my aforementioned no churn ice cream recipe. Don’t be alarmed by making your own ice cream, this is just a three ingredient, whisking and freezing situation. Once you have a generous scoop of the aforementioned ice cream, the choice is then yours, because, yes, I have two boozy cup options, to suit all your liquor based needs. The first features a generous *of course* shot of whisky and a sprinkle of fresh coffee grounds for the most amazing flavour combination. The second plays to the crowd with a lake of Amaretto topped with the crunch of a crumbled amaretti biscuit. Both divine, both so simple.
I wrestled with whether I should post this recipe as a Friday cocktail, but in the end went for a Thursday, because why wait a minute longer for a boozy ice cream cup?
I chose these two cups to share with you because they’re both so wonderful, I couldn’t pick my favourite. The whisky and coffee version comes courtesy of my love of an Irish coffee, the second, Amaretto cup is the product of a long, boozy supper at a local Italian restaurant with girl friends. Both are quick, simple, but so effortlessly elegant.
For the whisky ice cream cup, take a large scoop of your Lucy Loves Simple Ice Cream *or for goodness sake buy it if you can’t be arsed*. Try to make yours a more elegant scoop than mine. Pour the generous shot of whisky around the ice cream.
To finish, sprinkle over a generous pinch of freshly ground coffee.
For the Amaretto affair, repeat with the generous scoop and generous shot, but this time use my favourite almond Amaretto.
To top this cup, crumble over one or two crisp amaretti biscuits.
And that’s it; what could be simpler. Tuck in with a spoon, or a straw for the bit at the bottom of the glass.
Is it a cocktail or is it a dessert? You decide. And then make another one, just to make sure you’ve made the right decision.

Boozy Ice Cream Cups recipe
You can make as many of these as you like
A batch of my Simple Ice Cream recipe
Whisky Cup
1 large scoop ice cream
40ml whisky
A sprinkle of freshly ground coffee
Amaretto Cup
1 large scoop ice cream
40ml Amaretto liqueur
1 or 2 crumbled crunchy amaretti biscuits
Make a batch of my simple ice cream and leave to freeze.
For the whisky cup, take an elegant cocktail glass and add a scoop of ice cream. Pour over the generous shot of whisky then sprinkle on a goof pinch of ground coffee.
For the Amaretto cup, take another elegant cocktail glass and add another large scoop of ice cream. Pour around the shot of Amaretto, then crumble one or two crisp amaretti biscuits over the top.
Devour either, or both, cups for a delightfully tipsy end to a meal.
