Lemon Curd Gimlet recipe
It’s not often I post a new Friday cocktail these days. Time and inspiration often eludes me, but when I spotted this Lemon Curd Gimlet on the Craft Gin Club website, my appetite for a new cocktail was back in the room. This Easter, with some grotty weather looming on the horizon, stay inside and join me in this spring time special.
This isn’t the first time I’ve used lemon curd in a cocktail; a) because I love it and b) it adds such a zingy sweetness, I can’t resist it. My beloved gin is the other star of the drinking show, along with just a touch of sugar syrup and vanilla and plenty of fresh lemon juice. This cocktail has a dessert like quality, it may even replace the need to actually make a proper one. You’re going to have to try really hard not drink this gimlet in one mouthful.
Clyde doesn’t even like gin and I had to wrestle this out of his hands, so beware, the recipe makes 1 cocktail, but brace yourself for making many, many more.
I love making my own blender lemon curd, but who can be arsed when you’re thirsty for a new cocktail. You can make your own sugar syrup, however, if you don’t have some in the drinks cabinet. Just briefly simmer equal quantities of water and caster sugar until the sugar dissolves, and allow to cool.
I embraced the whole jam jar vibe and used one instead of a cocktail shaker for my lemon curd gimlet. I started with some ice, then followed in with my gin of choice.
Follow in with the fresh lemon juice, sugar syrup and vanilla.
And finally, it’s time for the heaped teaspoon of lemon curd. Yum.
Now shake your jar or shaker until the gimlet is well blended and chilled.
Pour the drink, no need to strain out the ice, as I’m not a purist, into a pretty glass of your choosing.
Top with a lemon zest twist then try not to drink in one gulp; it won’t be easy.
We’ve had Easter weekends on the beach, in the garden and on the sofa under blankets. I fear this long weekend may be the latter, but if you have a lemon curd gimlet in hand, it won’t really matter where you are.

Lemon Curd Gimlet recipe
Makes 1
You will need a pretty glass and a cocktail shaker, or jar, for this
Ice
45ml gin
30ml fresh lemon juice
15ml sugar syrup, from a bottle, or make your own by bringing equal volumes of caster sugar and water up to the simmer until the sugar dissolves, then cool
1/4 teaspoon vanilla extract
1 heaped teaspoon lemon curd
Lemon zest twist, to garnish
Take a cocktail shaker or jam jar and add some ice. Pour on the gin, fresh lemon juice, sugar syrup, vanilla and then spoon on the lemon curd. Shake really well until the cocktail is mixed, and the shaker or jar is chilled.
Pour into a pretty glass and serve with a generous lemon twist. Chug, then make another, this really is quite delicious.
