Fudgy Chocolate Mug Cake Recipe

The internet is awash with mug cakes and puddings. In fact it’s full of things being made in mugs, cups and muffin tins. I have mainly swerved these recipes thinking they looked strange until I found this particular Fudgy Chocolate Mug Cake Recipe on the Table for Two Blog, with thanks to them.

I can mostly take or leave puddings, especially when I am trying to be good, but quite often there is a call for something sweet after dinner when there’s nothing prepared, especially from the men in the house. And just like my Syrup Sponge Pudding, this Fudgy Chocolate Mug Cake can be thrown together at a moments notice with an embarrassingly small amount of effort. The key to this pudding’s *brace yourself* moistness and fudge-like texture is the last minute addition of a spoonful of chocolate spread. It melts into the pudding and creates a sort of sauce on the top. I used Nutella but any choccie spread would do, in fact, I imagine you could use any sort of sweet spread or even peanut butter if you are that way inclined. The cake has an almost brownie like texture and really does not taste as though it’s been whipped up in minutes and cooked in seconds.

Don’t be put off by the slightly naff nature of a microwave mug cake, this is completely delicious. So much so, George and I made *and ate* three in one sitting. It cries out for a splash of double cream and some sprinkles but these are optional extras. This Fudgy Chocolate Mug cake is just perfect on its own. One cup sized helping of cake, what’s not perfect about that.

Here’s what you will need for this simple but remarkably tasty Fudgy Chocolate Mug Cake. Apart from milk, you will need milk and I forgot to include it in the shot, it had been a long week.

You could mix this in the mug, but it would make a bit of a mess, so take a small bowl and measure in the flour.

Next, mix in the cocoa, caster sugar and pinch of salt then you are almost half way there.

Give it a stir then next in is the missing milk, present vanilla extract or paste and the two tablespoons of vegetable oil.

Now whisk or beat all this together until you have a glossy smooth cake batter. Scape every last drop of it into your mug. Choose a biggish mug – the wider the better. I bought an elegant looking glass affair just for the photo shoot but it wasn’t wide enough so the mixture did not cook evenly. Looks aren’t important here, taste is.

Try to ignore the messy working conditions. I was in a hurry to get this cooked so we could eat it.

Spoon the chocolate spread onto the top of the batter and lick the spoon if you are anything like me.

Pop the mug into your microwave for between 70 and 90 seconds. This will depend on your machine’s wattage and the size of your mug. Mine was done up a treat after 80 seconds.

Sprinkle with sprinkles and add a splash of cream, if you like, then this Fudgy Chocolate Mug Cake is all yours. Unless George is around then you’ll have to share it with him, or fashion another one.

Ok, so this isn’t haute cuisine, but who needs a faffy pudding when you are in a hurry. Sometimes all you want is dense, chocolatey, saucy sponge all to yourself. If that’s the case, this is the mug cake for you. And anyone standing around you as you eat it as, undoubtedly, you will have to make them one too.

Fudgy Chocolate Mug Cake Recipe

Makes 1

You will need, yes, a mug, rocket science it isn’t

40g plain flour

2 tablespoons cocoa powder

1/4 teaspoon baking powder

2 tablespoons caster sugar

a good pinch of salt

75ml milk

2 tablespoon vegetable oil

1 tablespoon chocolate spread, Nutella, for example

In a small bowl weigh out the flour, cocoa, baking powder, sugar and salt. Stir well until combined. Next pour in the milk and oil and whisk or beat with a wooden spoon until smooth. Carefully spoon the cake mixture into a largish mug.  Add a spoonful of chocolate spread onto the top of the cake mixture.

Microwave for around 70 to 90 seconds, depending on the power of your machine. Mine was done at 80 seconds, but keep checking after 60 seconds. Dive in with a big spoon, adding a good slug of double cream and sprinkles if you are that person.

      Buy one, it’s so worth it! But seriously, I can imagine if you put the mixture in a large ramekin and baked in a medium oven for 15 minutes it should be as delicious? Thanks, Mark. Lucy xx
